Tomato on top, rosemary inside
The cherry tomatoes are laid on the dough before it goes into the oven. There they open, concentrate and let their juice fall onto the surface, and that is where the contrast comes from between the sweetness of the roast tomato and the salt of the focaccia.
The rosemary, on the other hand, is worked into the dough. It scents from within, in every bite, rather than sitting on top as a herb that falls off at the first cut.
Durum wheat semolina
The dough is made with durum wheat semolina, not white flour. That is what gives it its warm colour and a crumb with body, able to hold the tomato without softening, and what makes the crust really crack.

Does it contain lactose?
No dairy ingredients, but it may contain traces of milk, so it is not suitable for severe allergies.
Can it be warmed or toasted?
Yes. Five to seven minutes in the oven, or in a pan or air fryer, brings back the crisp crust.
Can it be frozen?
Yes, in portions. Bake it straight from frozen, without thawing, so it keeps its texture.
Does it contain olive oil?
Yes, extra virgin olive oil, which is what gives it its aroma and the golden surface.
How should it be stored once opened?
In the fridge, between 0 °C and 4 °C, well wrapped or in an airtight bag. Eat it within two or three days, and warm it before serving.
