Italian tiramisù with Mascarpone Spiga Gourmet
The tiramisù of always, with real mascarpone. Coffee, cocoa and no shortcuts.

Ingredients
- 500 g Mascarpone Spiga Gourmet
- 4 Eggs, yolks and whites separated
- 100 g Sugar
- 200 g Sponge fingers
- 300 ml Cold espresso
- 1 tbsp Amaretto or Marsala (optional)
- Cocoa powder, to dust

Make the coffee and let it cool. Mix in the liqueur if you are using it.

Beat the yolks with the sugar until pale and fluffy.

Add the Mascarpone Spiga Gourmet to the yolk and sugar mixture, beating gently until smooth.

Whisk the whites to stiff peaks and fold them into the mascarpone cream a little at a time, keeping the air in.

Dip the sponge fingers quickly into the cold coffee, without soaking them.

Build the tiramisù in a dish or in individual glasses: a layer of soaked sponge fingers, then a layer of mascarpone cream. Repeat for two or three layers.

Chill for at least 4 hours, and preferably overnight.

Dust generously with cocoa powder before serving.
For a lighter version, use 3 yolks and 4 whites. Made in individual glasses it looks smarter and is easier to serve. Dark chocolate shavings on top push the flavour further.
